Todays lunch

Finding myself a little bit hungry today I decided to pig-out at lunch time with this beauty.

Its a White knot roll covered with poppy seeds and stuffed with Roma ham, cheese, leaves and garlic & red pepper chutney. Those half moons are cheese and chive profiteroles.

Low Fat Carrot cake

I came across this recipe last night and couldn’t wait to try it out. Its a healthier option for two main reasons. It uses oil instead of butter/margarine and almost 50% of the flour is whole wheat.

Bread

At the moment I’m really into bread.

I was buying assorted “pick ‘n’ mix” from my local Morrisons supermarket, but I have a breadmaker in my cupboard collecting dust and its now my best friend in the kitchen.

While second life was offline for updates today I made some really yummy bread with sundried tomatoes and mixed herbs. This little machine produced a crispy crusted, fluffy centred loaf from a pile of water, flour, salt, sugar, herbs and yeast and I cant describe how tasty it is or the wonderful aroma I have been smelling all afternoon (4hrs cooking time).

Here is a photo right from my plate as I write this. I’m enjoying this bread with a mug of steaming hot chicken and vegetable soup.

Pytt i Panna

Pytt i Panna (pronounced pitt-ee-pan-A) is a Swedish dish that is quick, easy and cheap to make - its basically a stir-fry with leftovers and story has it that the recepie was first used on Swedish fishing boats where lack of ingredients was a problem.

I’ve had this many times in Sweden - frozen in bags through to top restaurants. The main base of the food is the potatoe and onion, all meats can be changed for any other meat - even those tinned hot dog sausages are great in the mix or just standard bacon. Don’t be afraid to try the raw egg yolk, its actually okay.

Moussaka

Moussaka is Greek dish consisting of Lamb, onion, cheese.
When I made this I soon realised that its very similar to Lasagne without the pasta/beef. Its also like shepards pie except the shepards pie would be topped with mashed potato instead of bechemel sauce.

This recepie will comfortably serve 4 adults
